For about three weeks each January, night temperatures in the upper Nilgiris drop near freezing. The bush slows almost to a stop, and the leaf it produces afterwards is smaller, denser and far more concentrated. Estates call it frost tea. It is a fraction of the annual crop.
We buy it whole-leaf and orthodox-rolled — twisted rather than crushed — which is why the liquor is clean and coppery instead of the flat brown you get from CTC dust. It takes milk if you want it. It does not need it.
