There is a faster way to make ghee. You spin cream in a centrifuge, heat it hard, and you are done before breakfast. We do not do that.
Ours starts as full-fat milk from Gir cows that graze open pasture in Junagadh — a breed that carries only the A2 beta-casein protein. The milk is set into curd overnight in clay. Before dawn, when the air is still cool enough to keep the butter firm, it is churned by hand in a wooden bilona until the makhan separates and rises. That butter is then cooked down on a low wood fire for close to four hours, never rushed, until the milk solids caramelise at the bottom of the pot and the whole room smells like burnt sugar and grass.
Twenty-one litres of milk go into every litre you receive. That is the whole reason it costs what it costs, and the whole reason it tastes like it does.
