    The milk arrives

    Raw full-fat milk from indigenous A2 herds reaches the mill within four hours of milking, still warm. It is filtered through cloth and nothing is added to it.

    8:00 p.m.

    Set into curd

    A spoon of the previous day’s culture goes in, and the milk is left overnight in clay to set. Clay breathes and holds temperature. Steel does neither.

    4:00 a.m.

    Churned by hand

    The curd is churned in a wooden bilona, back and forth, until the makhan separates and rises to the top. Done before dawn, while the air is still cold enough to keep the butter firm.

    Slow wood fire

    The butter is simmered over wood for close to four hours. Never a rolling boil. The milk solids sink, caramelise, and give the ghee its colour and its smell.

    Off the heat, undisturbed. In the winter danedar batches this stage runs eighteen hours, which is what forms the grain.

The milk

Ten and a half litres of it — 21 litres of A2 Gir milk make one litre of ghee, and this jar is half a litre. Eleven families in Junagadh are paid ₹62 a litre on a rate fixed for the year, not for the day the market dips.

On the cheaper shelf: A commodity jar starts from roughly five litres of centrifuged cream, bought at spot.

Bilona ghee starts from curd, not cream. Milk is set into curd overnight, hand-churned in a wooden bilona until butter separates, and only then cooked down. Commodity ghee skips straight to cream via a centrifuge. The bilona route takes about 21 litres of milk per litre of ghee against 10–12 for the cream method, and produces a distinctly more lactic, more aromatic result.
No — grain is a sign of slow, undisturbed cooling, and it is traditionally prized. Our Kankrej Danedar is made specifically for it. In warmer months grain can soften or disappear entirely and the ghee may go liquid. Both states are normal and neither affects quality.
No. Ghee has almost no water content, which is exactly why it keeps. Store it at room temperature away from direct sunlight and always use a dry spoon — moisture is the only real enemy. A2 White Butter is the exception: it must stay refrigerated and used within 21 days.
Clarification removes the milk solids that carry lactose and casein, and our batches test below 0.1% residual milk solids. Most people with lactose intolerance tolerate it comfortably. If you have a diagnosed dairy allergy rather than an intolerance, speak to your doctor first — we would rather you asked.
